lots to update you all on! amazing what can happen in six days from my last post.
i started my new classes- one is action research in the classroom (online) and the mind of a serial killer (wednesday nights). see below- text i'm reading for class (a TON of reading...!) you probably are thinking... "megan.. what is wrong with you? why would you take such a freaky and scary class?"
well, my response to you is that this topic is fascinating to me yet it scares the daylights out of me at the same time. kind of like watching a scary or horror movie- it scares you but you enjoy it for some reason. i've always had fears about killers etc. and i feel like the more informed i am, the better. better to be educated, right?
absolutely incredible concert. if you remember, this was my gift to chris for v-day! it was a late night for a school night, he didn't start playing until 9:30.. but when he did... BLISS.
now for some RECIPES! :) easy ones, too!
1. Recipe #1: Cucumber Sandwiches!
see ingredients above: low fat garden vegetable cream cheese, loaf of bread (i did white), thinly sliced cucumbers (i used 2)
EASY! Cut bread into fourths (4 sandwiches per 2 pieces of bread) and lightly spread cream cheese. Put two cucumbers per sandwich and voila! People LOVED these! Guys AND girls!
2. Recipe #2: Chicken Bruschetta Bake (currently in the oven!)
Ingredients:
- 1 can (4.5 oz) diced tomatoes, undrained
- 2 cloves garlic, minced
- 1 pkg (6 oz) Stove Top Stuffing Mix for Chicken
- 1 1/2 lbs boneless, skinless, chicken breats, cut into bite sized pieces (I used 4 breasts)
- 1 tsp. dried basil leaves
- 1 cup shredded mozzarella
Preheat oven to 400 degrees.
Place tomatoes with liquid in medium bowl. Add garlic and stuffing mix and a 1/2 cup of water- stir just until stuffing mix is moistened. Set aside.
Place chicken in a 13X9 baking dish (I just did a random one and it worked fine) - sprinkle with basil and cheese. Top with stuffing mixture.
Bake 30 minutes or until chicken is cooked through. Makes 6 servings.
And I forgot to take a picture of the finished product! We had it with bread and corn on the cob. :) Chris really liked it a lot and I thought it was okay. So you get to try it out and make you own decision! :)

Hope you enjoyed the beautiful weather with the doggies! I'll have to remember those cucumber sandwiches for the next time that I entertain -- they seem really easy!
